Savory Bread and Egg Bake with Cheese

Savory Bread pudding

A simple oven dish made with bread, eggs, and milk

Sometimes the simplest recipes are the most useful in everyday life.
This dish turns basic ingredients like bread, eggs, and milk into a warm, satisfying meal with very little effort.

It is especially practical for using up leftover or slightly stale bread.
The bread cubes absorb the seasoned egg mixture, becoming soft and tender, while the cheese on top creates a lightly golden crust.

A humble, flexible recipe that fits easily into everyday cooking.

Ingredients

  • about 200–250 g bread (cubed, preferably slightly stale)
  • 500 ml milk
  • 4 eggs
  • salt to taste
  • herb salt to taste
  • a little broth (or stock powder)
  • nutmeg to taste
  • grated cheese (as desired)

Instructions

  1. Lightly grease a baking dish.

  2. Spread the bread cubes evenly in the dish.

  3. In a bowl, whisk together the milk, eggs, salt, herb salt, a little broth, and nutmeg.

  4. Pour the egg mixture evenly over the bread so that everything is well soaked.

  5. Sprinkle grated cheese on top.

  6. Bake in a preheated oven at about 190°C (375°F) for around 20 minutes, until the surface is golden brown.

Tips

  • Slightly stale bread works best because it absorbs the liquid well
  • For extra flavor, you can add sautéed onions or vegetables
  • Use more milk for a softer texture, less for a firmer result
  • You can vary the flavor by using different types of cheese
  • The term “broth” can be used as liquid stock or seasoning
  • Baking time may vary slightly depending on the oven
Note

In the original source, this dish is called “Ramequin.”
Today, the term is not commonly used in English for this type of dish and usually refers to a small baking dish rather than the recipe itself.
In practice, this recipe corresponds to a savory bread and egg bake.
