Ingredients

  • 8 tomatoes
  • 120 g Gervais
  • 250 g Tophen
  • 125 ml milk or cream
  • 1 small onion
  • a pinch of paprika powder
  • 1 tbsp horseradish
  • 4 tbsp soybeans
  • parsley, chives to taste
  • salt to taste

Instructions

  1. Cut a small lid off the top of each tomato and carefully scoop out the inside with a spoon.

  2. Finely chop the onion. Also finely chop the parsley and chives.

  3. In a bowl, mix the cream cheese (or Gervais), quark, and milk or cream until smooth and creamy.

  4. Add the onion, paprika powder, horseradish, soybeans, parsley, and chives, and mix well.

  5. Season with salt to taste.

  6. Lightly salt the inside of the tomatoes, then fill them evenly with the prepared mixture.

  7. Chill in the refrigerator for a short time before serving to allow the flavors to blend.

  8. Bell peppers can also be used instead of tomatoes.

Tips & Notes

  • Choose firm tomatoes
    → Softer ones can break easily and release too much moisture
  • Do not scoop out too much
    → If the base is too thin, the tomatoes may tear when filled
  • Lightly remove excess moisture
    → Removing some of the juice helps prevent a watery result
  • Keep the filling slightly firm
    → If it becomes too soft, adjust by adding a little more Topfen or cream cheese
  • Let it rest in the refrigerator
    → Chilling for about 30 minutes helps the flavors come together
  • Soak the onion if needed
    → If the taste is too strong, briefly soaking it in water will make it milder

Ingredients Note

Depending on where you live, Gervais and Topfen may not be easy to find.
In that case, you can simply use an available substitute.

Possible substitutes

  • cream cheese
  • quark
  • plain yogurt (strained if needed)

The final result may vary slightly, but it will still work well as a simple homemade dish.
Adjust the consistency as needed while mixing.
