Ingredients (Serves 2–3)
- 1 cup water (250 ml)
- 4–4½ tbsp honey
- 1 egg yolk
- Juice of 2 lemons
- 1 cup heavy cream (250 ml)
- 1/3–1/2 cup whole wheat flour (40–50 g)
- Chopped nuts (as needed)
Instructions
- Warm the water
Pour the water into a saucepan and gently heat it until it feels warm to the touch. Do not let it boil. - Add the flour
Gradually add the whole wheat flour while whisking continuously. This helps prevent lumps and keeps the mixture smooth. - Cook briefly
Place the saucepan over low heat and cook for about 1 minute, stirring constantly until it slightly thickens. Remove from heat. - Let it cool slightly
Allow the mixture to cool down a bit. Stir occasionally to maintain a smooth consistency. - Add the remaining ingredients
Slowly add the honey, egg yolk, and lemon juice while mixing. Adding them gradually prevents curdling or separation. - Whisk until light
Whisk the mixture for about 2 minutes until it becomes slightly airy and creamy. - Prepare the whipped cream
In a separate bowl, whip the cream until it forms soft peaks. - Fold in the cream
Gently fold the whipped cream into the lemon mixture. Be careful not to overmix, so the light texture is preserved. - Serve
Transfer to serving bowls or glasses and sprinkle chopped nuts on top.
